  • Mint leaves - 1/4 cup, chopped
  • Red chili - 1, finely chopped (adjust to taste)
  • Roasted rice powder - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. In a bowl, combine fish sauce, lime juice, minced garlic, and olive oil to create a marinade.
  2. Add the chicken thigh fillets to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until cooked through and juices run clear.
