- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh basil leaves - a handful, for garnish
- Salt - to taste
Steps
- Heat vegetable oil in a large pan or wok over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the Nam Prik Pao and cook for another minute to release its flavors.
- Add the quartered Thai eggplants, sliced red bell pepper, zucchini, carrot, broccoli florets, and green beans to the pan.
