  • Green beans - 100 grams, trimmed
  • Nam Prik Pao (Thai chili paste) - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - a handful, for garnish
  • Salt - to taste

Steps

  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the Nam Prik Pao and cook for another minute to release its flavors.
  4. Add the quartered Thai eggplants, sliced red bell pepper, zucchini, carrot, broccoli florets, and green beans to the pan.
  5. Stir-fry the vegetables for about 5-7 minutes until they are tender yet crisp.
