Ingredients

  • Firm Tofu - 200 grams
  • Nam Prik Pao (Thai chili paste) - 3 tablespoons
  • Vegetable Oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, sliced
  • Red Bell Pepper - 1, sliced
  • Zucchini - 1 small, sliced
  • Green Beans - 100 grams, trimmed
  • Thai Basil Leaves - 1/4 cup
  • Soy Sauce - 1 tablespoon
  • Lime Juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut into bite-sized cubes.
  2. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
  3. Add the tofu cubes to the skillet and cook until golden and crispy on all sides, about 10-12 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add minced garlic and sliced shallots. Sauté until fragrant and translucent, about 2-3 minutes.
  5. Add the sliced red bell pepper, zucchini, and green beans to the skillet. Cook for another 5-7 minutes until the vegetables are tender yet crisp.
  6. Stir in the Nam Prik Pao, soy sauce, and lime juice, mixing well to combine with the vegetables.
  7. Return the crispy tofu to the skillet, tossing gently to coat everything in the chili paste.
  8. Add the Thai basil leaves and season with salt and pepper to taste. Cook for an additional 1-2 minutes.
  9. Serve hot, garnished with extra basil if desired.
