- Firm Tofu - 200 grams
- Nam Prik Pao (Thai chili paste) - 3 tablespoons
- Vegetable Oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, sliced
- Red Bell Pepper - 1, sliced
- Zucchini - 1 small, sliced
- Green Beans - 100 grams, trimmed
- Thai Basil Leaves - 1/4 cup
- Soy Sauce - 1 tablespoon
- Lime Juice - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut into bite-sized cubes.
- Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
- Add the tofu cubes to the skillet and cook until golden and crispy on all sides, about 10-12 minutes. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sliced shallots. Sauté until fragrant and translucent, about 2-3 minutes.
- Add the sliced red bell pepper, zucchini, and green beans to the skillet. Cook for another 5-7 minutes until the vegetables are tender yet crisp.
- Stir in the Nam Prik Pao, soy sauce, and lime juice, mixing well to combine with the vegetables.
- Return the crispy tofu to the skillet, tossing gently to coat everything in the chili paste.
- Add the Thai basil leaves and season with salt and pepper to taste. Cook for an additional 1-2 minutes.
- Serve hot, garnished with extra basil if desired.
