Ingredients

  • Cauliflower - 300 grams, riced
  • Egg - 1 large
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Nam Prik Pao (Thai chili paste) - 2 tablespoons
  • Coconut oil - 1 tablespoon
  • Red bell pepper - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Green onions - 2, chopped
  • Fresh basil leaves - 10 grams, chopped
  • Cilantro - 10 grams, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, pulse the riced cauliflower until fine, then transfer to a clean kitchen towel and squeeze out excess moisture.
  3. In a mixing bowl, combine the riced cauliflower, egg, almond flour, and salt. Mix until a dough forms.
  4. Spread the cauliflower dough onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
  5. Bake the crust in the preheated oven for 15 minutes or until golden and firm.
  6. While the crust is baking, heat the coconut oil in a skillet over medium heat. Add the sliced red bell pepper and mushrooms, sautéing until tender, about 5-7 minutes.
  7. Remove the crust from the oven and spread the Nam Prik Pao evenly over the top.
  8. Top with the sautéed vegetables, chopped green onions, and fresh herbs.
  9. Return the pizza to the oven and bake for an additional 10 minutes.
  10. Remove from the oven, let cool slightly, slice, and serve warm.
