- Almond flour - 50 grams

- Nam Prik Pao (Thai chili paste) - 2 tablespoons
- Coconut oil - 1 tablespoon
- Red bell pepper - 1 medium, sliced
- Mushrooms - 100 grams, sliced
- Green onions - 2, chopped
- Fresh basil leaves - 10 grams, chopped
- Cilantro - 10 grams, chopped
Steps
- Preheat the oven to 200°C (400°F).
- In a food processor, pulse the riced cauliflower until fine, then transfer to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the riced cauliflower, egg, almond flour, and salt. Mix until a dough forms.
- Spread the cauliflower dough onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15 minutes or until golden and firm.
- While the crust is baking, heat the coconut oil in a skillet over medium heat. Add the sliced red bell pepper and mushrooms, sautéing until tender, about 5-7 minutes.
- Remove the crust from the oven and spread the Nam Prik Pao evenly over the top.
- Top with the sautéed vegetables, chopped green onions, and fresh herbs.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Remove from the oven, let cool slightly, slice, and serve warm.
