Ingredients

  • Chickpeas - 240 grams (cooked)
  • Nam Prik Pao (Thai chili jam) - 2 tablespoons
  • Whole wheat breadcrumbs - 50 grams
  • Fresh cilantro - 2 tablespoons (chopped)
  • Garlic - 2 cloves (minced)
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)

  • Lettuce leaves - 2
  • Cucumber - 1/2 (sliced)
  • Tomato - 1 (sliced)
  • Avocado - 1/2 (sliced)

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the Nam Prik Pao, whole wheat breadcrumbs, chopped cilantro, minced garlic, lime juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly on a separate skillet or in a toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced cucumber, tomato, and avocado.
  7. Top with the other half of the bun and serve immediately.
