Ingredients

  • Red bell pepper - 1 medium
  • Tomato - 1 medium
  • Shallots - 2 medium
  • Garlic - 3 cloves
  • Dried red chili peppers - 4 pieces
  • Soy sauce - 1 tablespoon
  • Palm sugar - 1 tablespoon
  • Tamarind paste - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the red bell pepper and tomato on a baking sheet and roast in the oven for about 20 minutes until the skin is charred and blistered.
  3. While the vegetables are roasting, soak the dried red chili peppers in hot water for about 10 minutes until softened.
  4. Peel and chop the shallots and garlic.
  5. In a pan, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant and golden brown.
  6. Once the roasted vegetables are done, remove them from the oven and let them cool slightly. Peel the skin off the bell pepper and tomato and chop them.
  7. In a blender, combine the sautéed shallots and garlic, roasted bell pepper, tomato, soaked dried chilies (drained), soy sauce, palm sugar, and tamarind paste. Blend until smooth.
  8. Taste and adjust seasoning with salt and lime juice as needed.
  9. Serve warm or at room temperature, garnished with fresh cilantro.
