Ingredients
- Red bell pepper - 1 medium
- Tomato - 1 medium
- Shallots - 2 medium
- Garlic - 3 cloves
- Dried red chili peppers - 4 pieces
- Soy sauce - 1 tablespoon
- Palm sugar - 1 tablespoon
- Tamarind paste - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Place the red bell pepper and tomato on a baking sheet and roast in the oven for about 20 minutes until the skin is charred and blistered.
- While the vegetables are roasting, soak the dried red chili peppers in hot water for about 10 minutes until softened.
- Peel and chop the shallots and garlic.
- In a pan, heat the vegetable oil over medium heat. Add the shallots and garlic, and sauté until fragrant and golden brown.
- Once the roasted vegetables are done, remove them from the oven and let them cool slightly. Peel the skin off the bell pepper and tomato and chop them.
- In a blender, combine the sautéed shallots and garlic, roasted bell pepper, tomato, soaked dried chilies (drained), soy sauce, palm sugar, and tamarind paste. Blend until smooth.
- Taste and adjust seasoning with salt and lime juice as needed.
- Serve warm or at room temperature, garnished with fresh cilantro.
