- Thai bird's eye chilies - 3, chopped
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Carrot - 1 medium, cut into sticks
- Cucumber - 1 medium, sliced
- Radishes - 4, quartered
- Lettuce leaves - for serving
Steps
- In a skillet, heat the vegetable oil over medium heat. Add the minced garlic and chopped red onion, sautéing until fragrant and the onion is translucent.
- Add the chopped tomatoes and button mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally until the tomatoes are soft and the mushrooms are tender.
- Stir in the chopped bird's eye chilies, soy sauce, lime juice, salt, and black pepper. Cook for another 5 minutes until everything is well combined and heated through.
- Remove from heat and stir in chopped cilantro. Allow the mixture to cool slightly.
- Prepare a serving platter with fresh vegetable sticks (carrot, cucumber, radishes) and lettuce leaves for wrapping.
- Serve the Nam Prik Ong Jay in a bowl alongside the fresh vegetables for dipping and wrapping.
