  • Thai bird's eye chilies - 3, chopped
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Carrot - 1 medium, cut into sticks
  • Cucumber - 1 medium, sliced
  • Radishes - 4, quartered
  • Lettuce leaves - for serving

Steps

  1. In a skillet, heat the vegetable oil over medium heat. Add the minced garlic and chopped red onion, sautéing until fragrant and the onion is translucent.
  2. Add the chopped tomatoes and button mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally until the tomatoes are soft and the mushrooms are tender.
  3. Stir in the chopped bird's eye chilies, soy sauce, lime juice, salt, and black pepper. Cook for another 5 minutes until everything is well combined and heated through.
  4. Remove from heat and stir in chopped cilantro. Allow the mixture to cool slightly.
  5. Prepare a serving platter with fresh vegetable sticks (carrot, cucumber, radishes) and lettuce leaves for wrapping.
  6. Serve the Nam Prik Ong Jay in a bowl alongside the fresh vegetables for dipping and wrapping.
