Ingredients
- Green chilies - 100 grams
- Tomatoes - 200 grams
- Garlic - 2 cloves
- Shallots - 1 medium
- Fresh cilantro - 10 grams
- Lime juice - 1 tablespoon
- Fish sauce - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Place the green chilies and tomatoes on a baking sheet and roast them in the oven for about 20 minutes, or until the skins are blistered and slightly charred.
- Remove the roasted chilies and tomatoes from the oven and let them cool for a few minutes.
- While the vegetables are cooling, finely chop the garlic and shallots.
- Once cooled, peel the skins off the chilies and tomatoes and place them in a blender or food processor.
- Add the chopped garlic, shallots, fresh cilantro, lime juice, fish sauce, and olive oil to the blender.
- Blend until you reach your desired smoothness, adding salt to taste.
- Serve the Nam Prik Num with a selection of fresh raw vegetables such as cucumber, carrot sticks, or bell pepper slices.
