Ingredients

  • Green chilies - 100 grams
  • Tomatoes - 200 grams
  • Garlic - 2 cloves
  • Shallots - 1 medium
  • Fresh cilantro - 10 grams
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Place the green chilies and tomatoes on a baking sheet and roast them in the oven for about 20 minutes, or until the skins are blistered and slightly charred.
  3. Remove the roasted chilies and tomatoes from the oven and let them cool for a few minutes.
  4. While the vegetables are cooling, finely chop the garlic and shallots.
  5. Once cooled, peel the skins off the chilies and tomatoes and place them in a blender or food processor.
  6. Add the chopped garlic, shallots, fresh cilantro, lime juice, fish sauce, and olive oil to the blender.
  7. Blend until you reach your desired smoothness, adding salt to taste.
  8. Serve the Nam Prik Num with a selection of fresh raw vegetables such as cucumber, carrot sticks, or bell pepper slices.
