Ingredients

  • Green chilies - 150 grams
  • Garlic - 3 cloves
  • Shallots - 2 medium
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Palm sugar - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Vegetable platter (cucumber, carrot, and radish) - 200 grams
  • Cooked jasmine rice - 150 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the green chilies, garlic, and shallots on a baking sheet and roast in the oven for about 15 minutes or until the chilies are blistered and the garlic is golden.
  3. Remove the roasted ingredients from the oven and let them cool slightly.
  4. In a blender or food processor, combine the roasted chilies, garlic, shallots, lime juice, fish sauce, and palm sugar. Blend until smooth.
  5. Transfer the dip to a serving bowl and mix in the chopped cilantro.
  6. Prepare a vegetable platter by slicing the cucumber, carrot, and radish into sticks.
  7. Serve the Nam Prik Noom with the vegetable platter and jasmine rice on the side.
