Ingredients
- Green chilies - 150 grams
- Garlic - 3 cloves
- Shallots - 2 medium
- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Palm sugar - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Vegetable platter (cucumber, carrot, and radish) - 200 grams
- Cooked jasmine rice - 150 grams
Steps
- Preheat the oven to 200°C (400°F).
- Place the green chilies, garlic, and shallots on a baking sheet and roast in the oven for about 15 minutes or until the chilies are blistered and the garlic is golden.
- Remove the roasted ingredients from the oven and let them cool slightly.
- In a blender or food processor, combine the roasted chilies, garlic, shallots, lime juice, fish sauce, and palm sugar. Blend until smooth.
- Transfer the dip to a serving bowl and mix in the chopped cilantro.
- Prepare a vegetable platter by slicing the cucumber, carrot, and radish into sticks.
- Serve the Nam Prik Noom with the vegetable platter and jasmine rice on the side.
