- Mushrooms (sliced) - 100 grams
- Baby spinach - 50 grams
- Cherry tomatoes (halved) - 100 grams
- Carrot (sliced thinly) - 1 medium
- Lime juice - 2 tablespoons
- Fresh cilantro (chopped) - 2 tablespoons
- Fish sauce - 1 tablespoon
- Thai basil leaves - 10 grams
- Red chili (sliced, for garnish) - 1 small
Steps
- In a pot, heat the vegetable broth over medium heat and add the Thai roasted chili paste, stirring until well combined.
- Add the coconut milk, stirring continuously until the mixture is smooth and begins to simmer.
- Add the sliced mushrooms, baby spinach, halved cherry tomatoes, and sliced carrots to the pot. Allow to cook for about 10 minutes, or until the vegetables are tender.
