Ingredients

  • Thai roasted chili paste (Nam Prik Pao) - 2 tablespoons
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Mushrooms (sliced) - 100 grams
  • Baby spinach - 50 grams
  • Cherry tomatoes (halved) - 100 grams
  • Carrot (sliced thinly) - 1 medium
  • Lime juice - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Thai basil leaves - 10 grams
  • Red chili (sliced, for garnish) - 1 small

Steps

  1. In a pot, heat the vegetable broth over medium heat and add the Thai roasted chili paste, stirring until well combined.
  2. Add the coconut milk, stirring continuously until the mixture is smooth and begins to simmer.
  3. Add the sliced mushrooms, baby spinach, halved cherry tomatoes, and sliced carrots to the pot. Allow to cook for about 10 minutes, or until the vegetables are tender.
  4. Stir in the lime juice, fish sauce, and chopped cilantro, then let it simmer for another 2-3 minutes.
  5. Serve the soup hot, garnished with fresh Thai basil leaves and sliced red chili.
