Ingredients

  • Dried red chilies - 5 pieces
  • Shallots - 2 medium, roughly chopped
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, diced
  • Coconut sugar - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh coriander - 2 tablespoons, chopped
  • Vegetable sticks (carrot, cucumber, bell pepper) - 200 grams

Steps

  1. Soak the dried red chilies in hot water for about 10 minutes until softened, then drain and chop.
  2. In a skillet over medium heat, add the chopped shallots and garlic, and sauté until fragrant and golden brown, about 5 minutes.
  3. Add the chopped chilies and diced tomato to the skillet, cooking for another 5 minutes until the tomatoes are soft.
  4. Stir in the coconut sugar and fish sauce, cooking for an additional 2 minutes until everything is well combined.
  5. Remove from heat and let cool slightly before transferring to a bowl.
  6. Mix in lime juice and chopped coriander, then serve with fresh vegetable sticks.
