- Dried red chilies - 5 pieces
- Shallots - 2 medium, roughly chopped
- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Coconut sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Vegetable sticks (carrot, cucumber, bell pepper) - 200 grams
Steps
- Soak the dried red chilies in hot water for about 10 minutes until softened, then drain and chop.
- In a skillet over medium heat, add the chopped shallots and garlic, and sauté until fragrant and golden brown, about 5 minutes.
- Add the chopped chilies and diced tomato to the skillet, cooking for another 5 minutes until the tomatoes are soft.
- Stir in the coconut sugar and fish sauce, cooking for an additional 2 minutes until everything is well combined.
- Remove from heat and let cool slightly before transferring to a bowl.
- Mix in lime juice and chopped coriander, then serve with fresh vegetable sticks.
