- Green beans - 150 grams, trimmed and cut into 3 cm lengths

- Coconut oil - 2 tablespoons
- Thai red curry paste - 1 tablespoon
- Soy sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Fresh Thai basil leaves - 10 leaves, roughly chopped
- Roasted peanuts - 30 grams, crushed
Steps
- Heat the coconut oil in a frying pan over medium heat until melted.
- Add the Thai red curry paste to the oil and sauté for 1-2 minutes until fragrant.
- Stir in the green beans, carrots, and bell pepper, cooking for about 5 minutes until just tender.
- In a small bowl, mix the soy sauce, brown sugar, and lime juice, then pour over the vegetables in the pan.
- Toss everything together and cook for an additional 2 minutes, allowing the sauce to coat the vegetables.
- Remove from heat and stir in the fresh Thai basil leaves and crushed peanuts.
- Serve warm or at room temperature, garnished with additional basil if desired.
