Ingredients

  • Green beans - 150 grams, trimmed and cut into 3 cm lengths
  • Red bell pepper - 1 medium, sliced thinly
  • Carrot - 1 medium, julienned
  • Coconut oil - 2 tablespoons
  • Thai red curry paste - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh Thai basil leaves - 10 leaves, roughly chopped
  • Roasted peanuts - 30 grams, crushed

Steps

  1. Heat the coconut oil in a frying pan over medium heat until melted.
  2. Add the Thai red curry paste to the oil and sauté for 1-2 minutes until fragrant.
  3. Stir in the green beans, carrots, and bell pepper, cooking for about 5 minutes until just tender.
  4. In a small bowl, mix the soy sauce, brown sugar, and lime juice, then pour over the vegetables in the pan.
  5. Toss everything together and cook for an additional 2 minutes, allowing the sauce to coat the vegetables.
  6. Remove from heat and stir in the fresh Thai basil leaves and crushed peanuts.
  7. Serve warm or at room temperature, garnished with additional basil if desired.
