- Red bell peppers - 2 medium
- Roma tomatoes - 3 medium
- Shallots - 2 small
- Garlic - 2 cloves
- Thai bird's eye chilies - 2 (adjust to taste)
- Lime - 1 (juiced)
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Fresh cilantro - 2 tablespoons (chopped)
- Cucumber - 1 medium (for serving)
- Carrot - 1 medium (for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red bell peppers and Roma tomatoes in half and place them cut-side down on a baking tray.
- Roast the bell peppers and tomatoes in the oven for about 20 minutes, or until the skins are blistered and charred.
- While the vegetables are roasting, finely chop the shallots, garlic, and bird's eye chilies.
- Once the peppers and tomatoes are done, allow them to cool slightly before peeling off the skins.
- In a mixing bowl, combine the roasted peppers and tomatoes with the chopped shallots, garlic, chilies, lime juice, fish sauce, and brown sugar.
- Using a fork or a mortar and pestle, mash the mixture until it reaches your desired consistency.
- Taste and adjust seasoning if necessary, adding more fish sauce or lime juice as desired.
- Serve the Nam Prik Khao with fresh cucumber and carrot sticks for dipping, and garnish with chopped cilantro.
