- Lime juice - 2 tablespoons
- Fish sauce - 1 tablespoon
- Coconut sugar - 1 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Cucumber - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green beans - 100 grams, trimmed
- Thai basil leaves - a handful, for garnish
Steps
- In a medium pot, bring water to a boil. Add the shrimp, squid, and mussels, and cook for about 3-4 minutes until the seafood is cooked through and opaque. Drain and set aside.
- In a small bowl, combine Nam Prik Kapi, lime juice, fish sauce, and coconut sugar. Mix well until the sugar is dissolved.
- In a serving dish, arrange the cooked seafood and drizzle the Nam Prik Kapi mixture over the top.
- Garnish with fresh cilantro and Thai basil leaves.
- On the side, arrange the cucumber slices, julienned carrots, and green beans for dipping.
