  • Nam Prik Kapi (shrimp paste chili dip) - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Coconut sugar - 1 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Cucumber - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green beans - 100 grams, trimmed
  • Thai basil leaves - a handful, for garnish

Steps

  1. In a medium pot, bring water to a boil. Add the shrimp, squid, and mussels, and cook for about 3-4 minutes until the seafood is cooked through and opaque. Drain and set aside.
  2. In a small bowl, combine Nam Prik Kapi, lime juice, fish sauce, and coconut sugar. Mix well until the sugar is dissolved.
  3. In a serving dish, arrange the cooked seafood and drizzle the Nam Prik Kapi mixture over the top.
  4. Garnish with fresh cilantro and Thai basil leaves.
  5. On the side, arrange the cucumber slices, julienned carrots, and green beans for dipping.
