- Eggplant - 100g
- Red bell pepper - 100g
- Green beans - 100g
- Onion - 50g
- Garlic - 3 cloves
- Thai bird's eye chili - 3 pieces
- Shrimp paste (vegetarian alternative) - 1 tsp
- Soy sauce - 1 tbsp
- Lime juice - 1 tbsp
- Cilantro - 2 tbsp, chopped
- Vegetable oil - 1 tbsp
- Salt - to taste
- Sugar - 1 tsp
Steps
- Preheat the oven to 200°C (392°F).
- Slice the eggplant and red bell pepper into bite-sized pieces and place them on a baking sheet.
- Drizzle the vegetables with vegetable oil and season with a pinch of salt. Roast in the oven for about 15 minutes until tender.
- Meanwhile, heat a small pan over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent, about 5 minutes.
- Add the roasted vegetables to the pan, then add the shrimp paste, soy sauce, lime juice, and sugar. Stir well to combine and cook for an additional 3-5 minutes.
- Remove from heat and let the mixture cool slightly before transferring it to a blender.
- Add chopped cilantro and bird's eye chili to the blender and pulse until a chunky dip forms. Adjust seasoning with salt to taste.
- Serve the Nam Prik Kapi Jay with fresh veggies like cucumber, carrot sticks, and steamed green beans for dipping.
