  • Onion - 50g
  • Garlic - 3 cloves
  • Thai bird's eye chili - 3 pieces
  • Shrimp paste (vegetarian alternative) - 1 tsp
  • Soy sauce - 1 tbsp
  • Lime juice - 1 tbsp
  • Cilantro - 2 tbsp, chopped
  • Vegetable oil - 1 tbsp
  • Salt - to taste
  • Sugar - 1 tsp

Steps

  1. Preheat the oven to 200°C (392°F).
  2. Slice the eggplant and red bell pepper into bite-sized pieces and place them on a baking sheet.
  3. Drizzle the vegetables with vegetable oil and season with a pinch of salt. Roast in the oven for about 15 minutes until tender.

  8. Serve the Nam Prik Kapi Jay with fresh veggies like cucumber, carrot sticks, and steamed green beans for dipping.
