- Fresh mussels - 250 grams, cleaned and debearded
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallots - 2, thinly sliced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, thinly sliced
- Egg - 1, lightly beaten
- Green onions - 2, chopped
- Tamarind paste - 2 tablespoons
- Fish sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Peanuts - 30 grams, crushed
- Fresh cilantro - for garnish
Steps
- Cook the rice noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant.
- Add the cleaned mussels to the skillet and stir-fry for 2-3 minutes until they begin to open. Discard any that remain closed.
- Incorporate the julienned carrot and sliced bell pepper, stirring for another 2 minutes until the vegetables are tender.
- Push the mussels and vegetables to one side of the pan, and pour the beaten egg into the empty side, scrambling it until fully cooked.
- Add the cooked rice noodles, tamarind paste, fish sauce, brown sugar, and lime juice to the skillet. Toss everything together until well combined and heated through.
- Stir in the chopped green onions and remove from heat.
- Plate the Mussel Pad Thai, sprinkle with crushed peanuts and garnish with fresh cilantro before serving.
