Ingredients
- Fresh mussels - 500 grams
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 2, thinly sliced
- Red bell pepper - 1, sliced
- Green beans - 100 grams, trimmed and cut into 2-inch pieces
- Thai basil - 1 cup, loosely packed
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon (dairy-free)
- Chili paste - 1 tablespoon (adjust to taste)
- Lime juice - 1 tablespoon
- Black pepper - 1/2 teaspoon
Steps
- Rinse the mussels under cold water and scrub the shells to remove any debris. Discard any mussels that are open and do not close when tapped.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced shallots, stir-frying until fragrant, about 1-2 minutes.
- Add the sliced red bell pepper and green beans to the skillet, and cook for another 3-4 minutes until the vegetables are slightly tender.
- Increase the heat to high and add the cleaned mussels to the skillet. Stir well to combine with the vegetables.
- Cover the skillet and cook for about 5-7 minutes, shaking occasionally, until the mussels have opened up.
- Once the mussels are open, stir in the soy sauce, oyster sauce, chili paste, lime juice, and black pepper. Mix well to evenly coat the mussels and vegetables.
- Add the Thai basil and toss everything together for another minute until the basil is wilted.
- Remove from heat and serve hot with steamed jasmine rice.
