Ingredients

  • Portobello mushrooms - 200 grams

  • Garlic powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)
  • Peanut butter - 3 tablespoons
  • Coconut milk - 1/4 cup
  • Brown sugar - 1 tablespoon
  • Sriracha sauce - 1 teaspoon (optional)
  • Chopped cilantro - for garnish

Steps

  1. Clean the Portobello mushrooms and slice them into 1/2 inch thick strips.
  2. In a bowl, mix soy sauce, lime juice, ground coriander, ground cumin, garlic powder, chili powder, and olive oil to create the marinade.
  3. Add the sliced mushrooms to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. While the mushrooms are marinating, prepare the peanut sauce by whisking together peanut butter, coconut milk, brown sugar, and Sriracha sauce in a small saucepan over low heat until smooth.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated mushroom strips onto the soaked wooden skewers.
  7. Grill the mushroom skewers for about 3-4 minutes on each side, until they are tender and have grill marks.
  8. Remove the skewers from the grill and serve hot with the peanut sauce drizzled on top or on the side.
  9. Garnish with chopped cilantro before serving.
