Steps
- Clean the Portobello mushrooms and slice them into 1/2 inch thick strips.
- In a bowl, mix soy sauce, lime juice, ground coriander, ground cumin, garlic powder, chili powder, and olive oil to create the marinade.
- Add the sliced mushrooms to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
- While the mushrooms are marinating, prepare the peanut sauce by whisking together peanut butter, coconut milk, brown sugar, and Sriracha sauce in a small saucepan over low heat until smooth.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated mushroom strips onto the soaked wooden skewers.
- Grill the mushroom skewers for about 3-4 minutes on each side, until they are tender and have grill marks.
- Remove the skewers from the grill and serve hot with the peanut sauce drizzled on top or on the side.
- Garnish with chopped cilantro before serving.
