Ingredients
- Rice noodles - 150 grams
- Shiitake mushrooms - 100 grams, sliced
- Button mushrooms - 100 grams, sliced
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Tofu - 100 grams, cubed
- Peanut butter - 1 tablespoon
- Tamarind paste - 2 tablespoons
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Sugar - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Crushed peanuts - 2 tablespoons, for garnish
- Fresh cilantro - a handful, for garnish
Steps
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and sauté for 30 seconds until fragrant.
- Add the cubed tofu and cook until golden brown, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the sliced shiitake and button mushrooms, cooking for about 4-5 minutes until they soften.
- Add the julienned carrot and sliced bell pepper, stirring for another 3-4 minutes.
- In a small bowl, mix together the tamarind paste, soy sauce, lime juice, peanut butter, and sugar until smooth.
- Add the cooked noodles, tofu, and sauce to the skillet with the vegetables. Toss everything together over medium heat for about 2-3 minutes until well combined.
- Garnish with chopped green onions, crushed peanuts, and fresh cilantro before serving.
