Ingredients

  • Rice noodles - 150 grams
  • Shiitake mushrooms - 100 grams, sliced
  • Button mushrooms - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Tofu - 100 grams, cubed
  • Peanut butter - 1 tablespoon
  • Tamarind paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Crushed peanuts - 2 tablespoons, for garnish
  • Fresh cilantro - a handful, for garnish

Steps

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Add the cubed tofu and cook until golden brown, about 5-7 minutes. Remove and set aside.
  5. In the same skillet, add the sliced shiitake and button mushrooms, cooking for about 4-5 minutes until they soften.
  6. Add the julienned carrot and sliced bell pepper, stirring for another 3-4 minutes.
  7. In a small bowl, mix together the tamarind paste, soy sauce, lime juice, peanut butter, and sugar until smooth.
  8. Add the cooked noodles, tofu, and sauce to the skillet with the vegetables. Toss everything together over medium heat for about 2-3 minutes until well combined.
  9. Garnish with chopped green onions, crushed peanuts, and fresh cilantro before serving.
