Ingredients
- Portobello mushrooms - 150 grams, finely chopped
- Button mushrooms - 100 grams, finely chopped
- Shallots - 2, finely minced
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 1 tablespoon
- Chili flakes - 1 teaspoon
- Rice flour - 3 tablespoons
- Olive oil - 1 tablespoon (for cooking)
- Burger buns - 2, whole wheat preferred
- Lettuce leaves - 2, for serving
- Sliced cucumber - 1/2, for serving
- Sliced tomato - 1, for serving
Steps
- In a skillet over medium heat, add olive oil and sauté the shallots and garlic until fragrant, about 2-3 minutes.
- Add the finely chopped portobello and button mushrooms to the skillet and cook until all moisture has evaporated, about 5-7 minutes.
- Remove from heat and let the mushroom mixture cool slightly. Stir in cilantro, mint, lime juice, soy sauce, and chili flakes.
- Once the mixture is cool, add rice flour to help bind the mixture. Form into two equal-sized patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown.
- Toast the burger buns in the skillet for about 1-2 minutes until slightly crisp.
- Assemble the burgers by placing a patty on each bun, then layering with lettuce, cucumber, and tomato.
- Serve immediately with your choice of dipping sauce or side.
