- Lime juice - 3 tablespoons
- Soy sauce - 2 tablespoons
- Chili flakes - 1 teaspoon (adjust to taste)
- Palm sugar - 1 teaspoon
- Lettuce leaves - 4 large, for serving
- Toasted rice powder - 1 tablespoon (optional)
- Cucumber - 1 small, sliced for garnish
Steps
- In a skillet over medium heat, add a splash of water and sauté the minced shallots and garlic until fragrant, about 2-3 minutes.
- Add the chopped button and shiitake mushrooms to the skillet and cook for about 5-7 minutes, until they're softened and any liquid has evaporated.
- Stir in the lime juice, soy sauce, chili flakes, and palm sugar, cooking for an additional 2 minutes to meld the flavors.
- Remove the skillet from heat and mix in the chopped mint and cilantro, along with the toasted rice powder if using.
- Allow the mixture to cool slightly before serving.
- Spoon the mushroom larb mixture into the lettuce leaves and garnish with cucumber slices.
