Ingredients

  • Button mushrooms - 200 grams, finely chopped
  • Shiitake mushrooms - 100 grams, finely chopped
  • Shallots - 2 medium, minced
  • Garlic - 2 cloves, minced
  • Fresh mint leaves - 2 tablespoons, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Palm sugar - 1 teaspoon
  • Lettuce leaves - 4 large, for serving
  • Toasted rice powder - 1 tablespoon (optional)
  • Cucumber - 1 small, sliced for garnish

Steps

  1. In a skillet over medium heat, add a splash of water and sauté the minced shallots and garlic until fragrant, about 2-3 minutes.
  2. Add the chopped button and shiitake mushrooms to the skillet and cook for about 5-7 minutes, until they're softened and any liquid has evaporated.
  3. Stir in the lime juice, soy sauce, chili flakes, and palm sugar, cooking for an additional 2 minutes to meld the flavors.
  4. Remove the skillet from heat and mix in the chopped mint and cilantro, along with the toasted rice powder if using.
  5. Allow the mixture to cool slightly before serving.
  6. Spoon the mushroom larb mixture into the lettuce leaves and garnish with cucumber slices.
