- Pork shoulder - 300 grams, cut into cubes
- Coconut milk - 100 ml
- Panaeng curry paste - 2 tablespoons
- Fish sauce - 1 tablespoon
- Brown sugar - 1 teaspoon
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Soy sauce - 1 tablespoon
- Skewers - 4-6 pieces (soaked in water if wooden)
- Fresh basil leaves - for garnish
- Chili powder - to taste
Steps
- In a mixing bowl, combine the coconut milk, Panaeng curry paste, fish sauce, brown sugar, lime juice, garlic, and soy sauce to create the marinade.
- Add the pork cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
- Preheat your grill or barbecue to medium-high heat.
- Thread the marinated pork onto the skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
- While the pork is grilling, pour the remaining marinade into a saucepan and bring it to a gentle simmer. Cook for 5 minutes to thicken slightly.
- Once the pork is done, remove it from the grill and let it rest for a couple of minutes.
- Serve the Moo Yang Panaeng skewers drizzled with the warm curry sauce, garnished with fresh basil leaves and a sprinkle of chili powder if desired.
