Ingredients

  • Pork shoulder - 300 grams, cut into cubes
  • Coconut milk - 100 ml
  • Panaeng curry paste - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Skewers - 4-6 pieces (soaked in water if wooden)
  • Fresh basil leaves - for garnish
  • Chili powder - to taste

Steps

  1. In a mixing bowl, combine the coconut milk, Panaeng curry paste, fish sauce, brown sugar, lime juice, garlic, and soy sauce to create the marinade.
  2. Add the pork cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated pork onto the skewers.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
  6. While the pork is grilling, pour the remaining marinade into a saucepan and bring it to a gentle simmer. Cook for 5 minutes to thicken slightly.
  7. Once the pork is done, remove it from the grill and let it rest for a couple of minutes.
  8. Serve the Moo Yang Panaeng skewers drizzled with the warm curry sauce, garnished with fresh basil leaves and a sprinkle of chili powder if desired.
