Ingredients

  • Pork shoulder - 300 grams
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Lime juice - 2 tablespoons
  • Thai chili flakes - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Shallot - 1 small, thinly sliced
  • Roasted rice powder - 1 tablespoon
  • Lettuce leaves - for serving

Steps

  1. 1. In a medium bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, and lime juice to create the marinade.
  2. 2. Add the pork shoulder to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes (or up to overnight for best results).
  3. 3. Preheat a grill or grill pan over medium-high heat.
  4. 4. Remove the pork from the marinade and grill for about 6-8 minutes on each side, or until cooked through and slightly charred.
  5. 5. While the pork is grilling, prepare the dipping sauce by combining lime juice, Thai chili flakes, chopped cilantro, chopped mint, sliced shallot, and roasted rice powder in a small bowl.
  6. 6. Once the pork is done, let it rest for a few minutes before slicing it thinly.
  7. 7. Serve the sliced pork on a plate with the dipping sauce and lettuce leaves on the side.
