Ingredients
- Pork shoulder - 400 grams
- Garlic - 3 cloves, minced
- Coriander roots - 2, chopped
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Lime juice - 2 tablespoons
- Chili flakes - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a bowl, combine minced garlic, chopped coriander roots, soy sauce, fish sauce, brown sugar, black pepper, and lime juice to create a marinade.
- Cut the pork shoulder into thin strips and add it to the marinade, ensuring the meat is well-coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).
- Preheat a grill or grill pan over medium-high heat. Lightly oil the grill to prevent sticking.
- Remove the pork from the marinade and shake off excess marinade. Grill the pork strips for about 5-7 minutes on each side, or until cooked through and slightly charred.
- While the pork is grilling, mix chili flakes with a bit of lime juice and a pinch of salt to create a dipping sauce.
- Once the pork is cooked, remove from the grill and let it rest for a few minutes before slicing.
- Serve the grilled pork with the spicy dipping sauce and garnish with fresh cilantro.
