- Fresh cilantro - 2 tablespoons, chopped
- Thai bird's eye chili - 1, finely chopped (optional)
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a mixing bowl, combine the coconut milk, Kua Kling curry paste, fish sauce, brown sugar, lime juice, chopped cilantro, and chopped chili to create a marinade.
- Add the bite-sized pieces of pork shoulder to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
- Preheat your grill or BBQ on medium-high heat.
- Thread the marinated pork pieces onto the skewers, leaving a little space between each piece.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the pork is cooked through and has nice grill marks.
