  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Thai bird's eye chili - 1, finely chopped (optional)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine the coconut milk, Kua Kling curry paste, fish sauce, brown sugar, lime juice, chopped cilantro, and chopped chili to create a marinade.
  2. Add the bite-sized pieces of pork shoulder to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. Preheat your grill or BBQ on medium-high heat.
  4. Thread the marinated pork pieces onto the skewers, leaving a little space between each piece.
