- Pork shoulder - 300 grams, cut into 2 cm cubes
- Coconut milk - 200 ml
- Khao Soi curry paste - 2 tablespoons
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh cilantro - 2 tablespoons, chopped
- Skewers - 4, soaked in water
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine the pork cubes, soy sauce, garlic, salt, and black pepper. Let marinate for at least 15 minutes.
- While the pork is marinating, prepare the Khao Soi sauce: In a saucepan, heat the coconut milk over medium heat.
- Add the Khao Soi curry paste to the coconut milk, stirring until well combined, and let it simmer for about 5 minutes.
- Add the brown sugar and lime juice to the sauce, stirring well, and simmer for another 3 minutes. Adjust seasoning to taste.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated pork onto the soaked skewers.
- Grill the pork skewers for about 10 minutes, turning occasionally until they are cooked through and slightly charred.
- Serve the grilled pork skewers on a plate with the Khao Soi sauce drizzled over the top, garnished with fresh cilantro.
