Ingredients

  • Pork shoulder - 300 grams, cut into 2 cm cubes
  • Coconut milk - 200 ml
  • Khao Soi curry paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Skewers - 4, soaked in water
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine the pork cubes, soy sauce, garlic, salt, and black pepper. Let marinate for at least 15 minutes.
  2. While the pork is marinating, prepare the Khao Soi sauce: In a saucepan, heat the coconut milk over medium heat.
  3. Add the Khao Soi curry paste to the coconut milk, stirring until well combined, and let it simmer for about 5 minutes.
  4. Add the brown sugar and lime juice to the sauce, stirring well, and simmer for another 3 minutes. Adjust seasoning to taste.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated pork onto the soaked skewers.
  7. Grill the pork skewers for about 10 minutes, turning occasionally until they are cooked through and slightly charred.
  8. Serve the grilled pork skewers on a plate with the Khao Soi sauce drizzled over the top, garnished with fresh cilantro.
