Ingredients

  • Pork shoulder - 400 grams
  • Garlic - 4 cloves
  • Coriander roots - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Fish sauce - 2 tablespoons
  • Palm sugar - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Skewers (soaked in water) - 4-6 pieces

Steps

  1. Cut the pork shoulder into 2 cm cubes and set aside.
  2. In a mortar and pestle, combine garlic and coriander roots, grinding them into a paste.
  3. In a bowl, mix the garlic-coriander paste with soy sauce, fish sauce, palm sugar, black pepper, and lime juice to create the marinade.
  4. Add the pork cubes to the marinade, ensuring they are well-coated, and let it marinate for at least 15 minutes.
  5. Preheat the grill or barbecue to medium-high heat.
  6. Thread the marinated pork onto the soaked skewers, packing them tightly but not overcrowding.
  7. Grill the skewers for about 10-15 minutes, turning occasionally until the pork is cooked through and has nice grill marks.
  8. Serve hot with a side of sticky rice and fresh vegetables.
