Ingredients

  • Pork tenderloin - 250 grams, thinly sliced
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Shallots - 2, thinly sliced
  • Roasted chili paste (Nam Prik Pao) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Fresh basil leaves - 10 grams, chopped
  • Lime - 1, cut into wedges for serving

Steps

  1. Heat the vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and sliced shallots, sautéing for about 1 minute until fragrant.
  3. Increase the heat to high and add the sliced pork, cooking until browned and cooked through, about 5-7 minutes.
  4. Stir in the roasted chili paste, soy sauce, and oyster sauce, mixing well to coat the pork.
  5. Add the sliced red and green bell peppers, carrot, and zucchini to the pan, stirring-fry for another 3-5 minutes until the vegetables are tender-crisp.
  6. Remove from heat and stir in the chopped fresh basil.
  7. Serve hot with lime wedges on the side.
