- Carrot - 1 medium, julienned
- Zucchini - 1 medium, sliced
- Garlic - 2 cloves, minced
- Shallots - 2, thinly sliced
- Roasted chili paste (Nam Prik Pao) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Fresh basil leaves - 10 grams, chopped
- Lime - 1, cut into wedges for serving
Steps
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and sliced shallots, sautéing for about 1 minute until fragrant.
- Increase the heat to high and add the sliced pork, cooking until browned and cooked through, about 5-7 minutes.
- Stir in the roasted chili paste, soy sauce, and oyster sauce, mixing well to coat the pork.
- Add the sliced red and green bell peppers, carrot, and zucchini to the pan, stirring-fry for another 3-5 minutes until the vegetables are tender-crisp.
- Remove from heat and stir in the chopped fresh basil.
- Serve hot with lime wedges on the side.
