- Ground pork - 300 grams
- Thai holy basil leaves - 100 grams
- Garlic - 4 cloves, minced
- Thai bird's eye chilies - 2, minced (adjust to taste)
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Eggs - 2 large
- Cooked jasmine rice - 2 cups
Steps
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and bird's eye chilies, and stir-fry for about 30 seconds until fragrant.
- Add the ground pork to the pan, breaking it up with a spatula, and cook until browned and cooked through, about 5-7 minutes.
- Stir in the soy sauce, oyster sauce, fish sauce, and sugar, mixing well to coat the pork.
- Add the holy basil leaves, tossing them in the pan until they wilt, about 1-2 minutes.
- In a separate pan, heat the remaining tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and fry until the whites are set but the yolks are still runny, about 3-4 minutes.
- Serve the stir-fried pork over cooked jasmine rice, topped with the fried eggs.
