Ingredients

  • Minced pork - 200 grams
  • Thai basil leaves - 50 grams
  • Garlic, minced - 3 cloves
  • Bird's eye chili, chopped - 2-3 pieces (to taste)
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Eggs - 2 large
  • Cooked jasmine rice - 2 cups

Steps

  1. Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add minced garlic and chopped bird's eye chili, and stir-fry until fragrant, about 30 seconds.
  2. Add minced pork to the pan, breaking it up with a spatula. Cook until browned and fully cooked, around 5-7 minutes.
  3. Stir in soy sauce, oyster sauce, and sugar. Mix well and let it cook for another 2-3 minutes until the sauce is well incorporated.
  4. Add the Thai basil leaves and stir until wilted, about 1 minute. Remove from heat.
  5. In a separate pan, heat the remaining tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and fry until the whites are set but the yolks remain runny, about 2-3 minutes.
  6. To serve, place a generous portion of the Moo Pad Krapow on a plate over cooked jasmine rice, and top with a fried egg. Garnish with extra basil if desired.
