Ingredients

  • Vegetarian minced soy protein - 200 grams
  • Garlic - 3 cloves, minced
  • Thai bird's eye chili - 2, finely chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce (vegetarian) - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Bell pepper (red or green) - 1, sliced
  • Green beans - 100 grams, trimmed and chopped
  • Basil leaves (Thai basil if available) - 1 cup, loosely packed
  • Cooked jasmine rice - 2 cups, for serving

Steps

  1. Heat vegetable oil in a large skillet or wok over medium heat.
  2. Add minced garlic and chopped bird's eye chili to the pan, stir-frying for about 30 seconds until fragrant.
  3. Add the vegetarian minced soy protein, stirring to combine and cook for 3-4 minutes until heated through.
  4. Stir in the sliced bell pepper and chopped green beans, cooking for another 3-4 minutes until the vegetables are tender yet crisp.
  5. Pour in the soy sauce and vegetarian oyster sauce, mixing well to coat all ingredients.
  6. Remove from heat and fold in the basil leaves until wilted.
  7. Serve the Moo Pad Krapow Jay hot over cooked jasmine rice.
