Ingredients

  • Ground pork - 300 grams
  • Thai bird's eye chili - 2 (finely chopped)
  • Garlic - 3 cloves (minced)
  • Shallot - 1 (finely chopped)
  • Thai soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fresh Thai basil leaves - 50 grams
  • Vegetable oil - 2 tablespoons
  • Cooked jasmine rice - 2 cups (for serving)
  • Fried egg - 2 (optional, for serving)

Steps

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and chopped shallot, stirring for about 1 minute until fragrant.
  3. Add the ground pork to the skillet, breaking it apart with a spatula and cooking until browned, about 5-7 minutes.
  4. Stir in the chopped bird's eye chili, soy sauce, oyster sauce, and sugar, cooking for another 2-3 minutes until well combined.
  5. Remove the skillet from the heat and fold in the fresh Thai basil leaves until just wilted.
  6. Serve the Moo Pad Krapow over cooked jasmine rice and top with a fried egg if desired.
