Ingredients

  • Chickpeas - 200 grams (cooked)
  • Sweet potato - 150 grams (cooked and mashed)
  • Red onion - 50 grams (finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh cilantro - 30 grams (chopped)
  • Massaman curry paste - 2 tablespoons
  • Peanut butter - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Sliced cucumber - 50 grams
  • Sliced tomato - 50 grams

Steps

  1. In a large bowl, mash the cooked chickpeas and sweet potato together until smooth.
  2. Add the chopped red onion, minced garlic, cilantro, Massaman curry paste, peanut butter, lime juice, breadcrumbs, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  5. In the same skillet, toast the burger buns lightly for 1-2 minutes until golden.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced cucumber, and sliced tomato. Add the top bun.
