- Chickpeas - 200 grams (cooked)
- Sweet potato - 150 grams (cooked and mashed)
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh cilantro - 30 grams (chopped)
- Massaman curry paste - 2 tablespoons
- Peanut butter - 1 tablespoon
- Lime juice - 1 tablespoon
- Breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Sliced cucumber - 50 grams
- Sliced tomato - 50 grams
Steps
- In a large bowl, mash the cooked chickpeas and sweet potato together until smooth.
- Add the chopped red onion, minced garlic, cilantro, Massaman curry paste, peanut butter, lime juice, breadcrumbs, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- In the same skillet, toast the burger buns lightly for 1-2 minutes until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the cooked patty, sliced cucumber, and sliced tomato. Add the top bun.
