- Potatoes - 300 grams
- Chickpeas - 100 grams (canned, drained)
- Massaman curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Breadcrumbs - 50 grams
- Cornstarch - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Oil - for frying (about 2 tablespoons)
- Burger buns - 2
- Cucumber - 50 grams (sliced)
- Fresh cilantro - a handful
- Peanut butter - 1 tablespoon
- Lime juice - 1 tablespoon
Steps
- Peel and chop the potatoes into chunks, then boil them in salted water for about 15 minutes or until tender.
- Drain the potatoes and transfer them to a bowl. Mash them until smooth.
- In another bowl, mash the chickpeas with a fork, leaving some chunks for texture.
- Combine the mashed potatoes and chickpeas with the Massaman curry paste, coconut milk, breadcrumbs, cornstarch, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat oil in a frying pan over medium heat. Fry the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the peanut sauce by mixing peanut butter and lime juice in a small bowl until smooth.
- Toast the burger buns lightly in the same pan until golden.
- Assemble the burgers by placing a potato patty on each bun, topping with cucumber slices, fresh cilantro, and a drizzle of peanut sauce.
