Ingredients

  • Potatoes - 300 grams
  • Chickpeas - 100 grams (canned, drained)
  • Massaman curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Breadcrumbs - 50 grams
  • Cornstarch - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Oil - for frying (about 2 tablespoons)
  • Burger buns - 2
  • Cucumber - 50 grams (sliced)
  • Fresh cilantro - a handful
  • Peanut butter - 1 tablespoon
  • Lime juice - 1 tablespoon

Steps

  1. Peel and chop the potatoes into chunks, then boil them in salted water for about 15 minutes or until tender.
  2. Drain the potatoes and transfer them to a bowl. Mash them until smooth.
  3. In another bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  4. Combine the mashed potatoes and chickpeas with the Massaman curry paste, coconut milk, breadcrumbs, cornstarch, salt, and black pepper. Mix until well combined.
  5. Form the mixture into two equal-sized patties.
  6. Heat oil in a frying pan over medium heat. Fry the patties for about 5-6 minutes on each side, or until golden brown and crispy.
  7. While the patties are cooking, prepare the peanut sauce by mixing peanut butter and lime juice in a small bowl until smooth.
  8. Toast the burger buns lightly in the same pan until golden.
  9. Assemble the burgers by placing a potato patty on each bun, topping with cucumber slices, fresh cilantro, and a drizzle of peanut sauce.
