Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Coconut milk - 200 ml
- Massaman curry paste - 3 tablespoons
- Red bell pepper - 1, sliced
- Carrot - 1, julienned
- Zucchini - 1, sliced
- Tofu - 200 grams, cubed
- Vegetable broth - 100 ml
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Peanut butter - 1 tablespoon
- Fresh cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large pan, heat a tablespoon of water or vegetable broth over medium heat. Add the cubed tofu and sauté until golden brown, about 5-7 minutes. Remove the tofu and set aside.
- In the same pan, add the Massaman curry paste and cook for 1-2 minutes until fragrant, stirring continuously to avoid burning.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a gentle simmer.
- Add the sliced red bell pepper, julienned carrot, and zucchini to the pan. Cook for 5-7 minutes until the vegetables are tender but still crisp.
- Stir in the peanut butter, soy sauce, lime juice, and cooked tofu. Season with salt and black pepper to taste. Simmer for an additional 2-3 minutes.
- Add the cooked pasta to the pan and toss to coat in the sauce. Cook for another 2 minutes to heat through.
- Serve hot, garnished with fresh cilantro.
