Ingredients

  • Rice noodles - 150 grams
  • Coconut milk - 200 ml
  • Massaman curry paste - 2 tablespoons
  • Vegetable broth - 200 ml
  • Tofu - 150 grams, cubed
  • Red bell pepper - 1, sliced
  • Carrot - 1, julienned
  • Green beans - 100 grams, trimmed
  • Peanut butter - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish
  • Chopped roasted peanuts - for garnish

Steps

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a large pan, heat a tablespoon of oil over medium heat and add the cubed tofu, frying until golden brown on all sides. Remove and set aside.
  3. In the same pan, add the Massaman curry paste and cook for 1-2 minutes until fragrant.
  4. Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a gentle simmer.
  5. Add the sliced red bell pepper, julienned carrot, and green beans to the pan. Cook for 5-7 minutes until the vegetables are tender.
  6. Stir in the peanut butter, soy sauce, lime juice, and the cooked tofu. Mix well and let it cook for another 2-3 minutes to heat through.
  7. Divide the cooked rice noodles into bowls and top with the Massaman curry mixture.
  8. Garnish with fresh cilantro and chopped roasted peanuts before serving.
