- Rice noodles - 150 grams
- Coconut milk - 200 ml
- Massaman curry paste - 2 tablespoons
- Vegetable broth - 200 ml
- Tofu - 150 grams, cubed
- Red bell pepper - 1, sliced
- Carrot - 1, julienned
- Green beans - 100 grams, trimmed
- Peanut butter - 1 tablespoon
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
- Chopped roasted peanuts - for garnish
Steps
- Cook the rice noodles according to package instructions, drain, and set aside.
- In a large pan, heat a tablespoon of oil over medium heat and add the cubed tofu, frying until golden brown on all sides. Remove and set aside.
- In the same pan, add the Massaman curry paste and cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and vegetable broth, stirring to combine. Bring to a gentle simmer.
- Add the sliced red bell pepper, julienned carrot, and green beans to the pan. Cook for 5-7 minutes until the vegetables are tender.
- Stir in the peanut butter, soy sauce, lime juice, and the cooked tofu. Mix well and let it cook for another 2-3 minutes to heat through.
- Divide the cooked rice noodles into bowls and top with the Massaman curry mixture.
- Garnish with fresh cilantro and chopped roasted peanuts before serving.
