  • Green beans - 100 grams, trimmed
  • Tofu - 200 grams, cubed
  • Peanuts - 30 grams, crushed
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the Massaman curry paste and sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir well to combine with the curry paste.
  4. Add the diced potato and sliced carrot to the pan, cooking for about 5 minutes.
  5. Stir in the sliced red bell pepper and green beans, cooking for an additional 5 minutes.
  6. Add the cubed tofu, soy sauce, brown sugar, and lime juice, mixing gently to coat all the ingredients.
  7. Simmer the curry for another 10-15 minutes, or until the vegetables are tender.
  8. Serve hot, garnished with crushed peanuts and fresh cilantro.
