- Tofu - 200 grams, cubed
- Peanuts - 30 grams, crushed
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the Massaman curry paste and sauté for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir well to combine with the curry paste.
- Add the diced potato and sliced carrot to the pan, cooking for about 5 minutes.
- Stir in the sliced red bell pepper and green beans, cooking for an additional 5 minutes.
- Add the cubed tofu, soy sauce, brown sugar, and lime juice, mixing gently to coat all the ingredients.
- Simmer the curry for another 10-15 minutes, or until the vegetables are tender.
