Ingredients

  • Firm tofu - 300 grams
  • Coconut milk - 200 ml
  • Massaman curry paste - 2 tablespoons
  • Potato - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Onion - 1 medium, chopped
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Peanut butter - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Press the tofu to remove excess moisture, then cut it into cubes.
  3. In a large bowl, mix the coconut milk, Massaman curry paste, soy sauce, brown sugar, lime juice, and peanut butter until well combined.
  4. Add the diced potato, sliced carrot, sliced red bell pepper, and chopped onion to the bowl. Stir until the vegetables are well coated with the curry mixture.
  5. Gently fold in the tofu cubes, ensuring they are evenly coated.
  6. Transfer the mixture into a baking dish and season with salt and pepper to taste.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, until the vegetables are tender and the curry is bubbly.
  9. Garnish with fresh cilantro before serving.
