- Firm tofu - 300 grams
- Coconut milk - 200 ml
- Massaman curry paste - 2 tablespoons
- Potato - 1 medium, diced
- Carrot - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Onion - 1 medium, chopped
- Soy sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Peanut butter - 1 tablespoon
- Fresh cilantro - for garnish
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Press the tofu to remove excess moisture, then cut it into cubes.
- In a large bowl, mix the coconut milk, Massaman curry paste, soy sauce, brown sugar, lime juice, and peanut butter until well combined.
- Add the diced potato, sliced carrot, sliced red bell pepper, and chopped onion to the bowl. Stir until the vegetables are well coated with the curry mixture.
- Gently fold in the tofu cubes, ensuring they are evenly coated.
- Transfer the mixture into a baking dish and season with salt and pepper to taste.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the vegetables are tender and the curry is bubbly.
- Garnish with fresh cilantro before serving.
