- Chopped fresh cilantro - 2 tablespoons
- Roasted peanuts (crushed) - for garnish
Steps
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the Massaman curry paste to the skillet and cook for 1-2 minutes, stirring constantly to combine with the onion, garlic, and ginger.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the cubed potato, sliced carrot, and sliced red bell pepper. Cook for about 10 minutes until the vegetables are tender.
- Stir in the green peas and soy sauce, cooking for another 2 minutes.
- Add the cooked pasta to the skillet, tossing to combine and heat through.
- Remove from heat and stir in the lime juice and chopped cilantro.
- Serve hot, garnished with crushed roasted peanuts.
