  • Red bell pepper (sliced) - 1
  • Carrot (sliced) - 1
  • Potato (cubed) - 1 medium
  • Green peas - 100 grams
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Chopped fresh cilantro - 2 tablespoons
  • Roasted peanuts (crushed) - for garnish

Steps

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the Massaman curry paste to the skillet and cook for 1-2 minutes, stirring constantly to combine with the onion, garlic, and ginger.
  5. Pour in the coconut milk and bring to a gentle simmer.
  6. Add the cubed potato, sliced carrot, and sliced red bell pepper. Cook for about 10 minutes until the vegetables are tender.
  7. Stir in the green peas and soy sauce, cooking for another 2 minutes.
  8. Add the cooked pasta to the skillet, tossing to combine and heat through.
  9. Remove from heat and stir in the lime juice and chopped cilantro.
  10. Serve hot, garnished with crushed roasted peanuts.
