  • Red bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green beans - 100 grams, trimmed
  • Peanut butter - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Water - 500 ml

Steps

  1. Cook the rice noodles according to the package instructions, then drain and set aside.
  2. In a large pan, heat 200 ml of water over medium heat and add the Massaman curry paste, stirring until fragrant.
  3. Pour in the coconut milk and bring the mixture to a gentle simmer.
  4. Add the cubed tofu, sliced bell pepper, julienned carrot, and green beans to the pan, cooking for about 8-10 minutes until the vegetables are tender.
  5. Stir in the peanut butter and soy sauce, mixing until well combined.
  6. Add the cooked noodles to the pan, tossing everything together gently to coat the noodles in the sauce.
  7. Finish with lime juice and season with salt to taste.
  8. Serve hot, garnished with fresh cilantro.
