- Peanut butter - 2 tablespoons
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish

- Water - 500 ml
Steps
- Cook the rice noodles according to the package instructions, then drain and set aside.
- In a large pan, heat 200 ml of water over medium heat and add the Massaman curry paste, stirring until fragrant.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the cubed tofu, sliced bell pepper, julienned carrot, and green beans to the pan, cooking for about 8-10 minutes until the vegetables are tender.
- Stir in the peanut butter and soy sauce, mixing until well combined.
- Add the cooked noodles to the pan, tossing everything together gently to coat the noodles in the sauce.
- Finish with lime juice and season with salt to taste.
- Serve hot, garnished with fresh cilantro.
