- Cooked chickpeas - 200 grams

- Massaman curry paste - 2 tablespoons
- Coconut milk - 60 ml
- Breadcrumbs - 50 grams
- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Burger buns - 2, whole grain preferred
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Peanut sauce - for drizzling (optional)
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork until slightly coarse.
- Add the chopped red onion, minced garlic, grated ginger, Massaman curry paste, coconut milk, breadcrumbs, lime juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Shape the mixture into two patties and refrigerate for 10-15 minutes to firm up.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown.
- While the patties are cooking, toast the burger buns lightly.
- Once cooked, assemble the burgers by placing a patty on each bun, adding lettuce, tomato slices, cucumber slices, and a drizzle of peanut sauce if desired.
