  • Cooked chickpeas - 200 grams

  • Massaman curry paste - 2 tablespoons
  • Coconut milk - 60 ml
  • Breadcrumbs - 50 grams
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2, whole grain preferred
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Peanut sauce - for drizzling (optional)

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork until slightly coarse.
  2. Add the chopped red onion, minced garlic, grated ginger, Massaman curry paste, coconut milk, breadcrumbs, lime juice, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Shape the mixture into two patties and refrigerate for 10-15 minutes to firm up.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown.
  5. While the patties are cooking, toast the burger buns lightly.
