Ingredients

  • cooked chickpeas - 250 grams
  • cooked quinoa - 100 grams
  • red onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • fresh ginger - 1 tablespoon, grated
  • massaman curry paste - 2 tablespoons
  • peanut butter - 2 teaspoons
  • soy sauce - 1 tablespoon
  • lime juice - 1 tablespoon
  • whole wheat breadcrumbs - 50 grams
  • coriander leaves - 2 tablespoons, chopped
  • salt - to taste
  • black pepper - to taste
  • olive oil - for frying
  • burger buns - 2
  • sliced cucumber - for topping
  • sliced tomatoes - for topping
  • lettuce leaves - for serving

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, chopped red onion, minced garlic, grated ginger, massaman curry paste, peanut butter, soy sauce, lime juice, breadcrumbs, chopped coriander, salt, and black pepper to the mashed chickpeas.
  3. Mix all the ingredients thoroughly until well combined. If the mixture is too wet, add more breadcrumbs as needed.
  4. Divide the mixture into two equal portions and shape them into patties.
  5. Heat olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Toast the burger buns lightly in the same pan for added flavor.
  7. Assemble the burgers by placing each chickpea patty on a bun and topping with sliced cucumber, sliced tomatoes, and lettuce leaves.
