Ingredients

  • Glutinous rice - 150g
  • Coconut milk - 200ml
  • Sugar - 50g
  • Salt - 1/4 tsp
  • Ripe mango - 1 large
  • Sesame seeds (optional) - 1 tbsp

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the soaked rice and steam it in a steamer basket lined with cheesecloth or a clean kitchen towel for about 20 minutes, or until tender.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves, but do not bring it to a boil.
  4. Once the rice is cooked, transfer it to a bowl and pour about 150ml of the coconut sauce over it. Mix gently and let it sit for about 10 minutes to absorb the flavors.
  5. While the rice is resting, peel and slice the mango into thin strips.
  6. To serve, place a portion of the sticky rice on a plate, arrange the mango slices beside it, and drizzle the remaining coconut sauce on top. Sprinkle with sesame seeds if desired.
