Mango Sticky Rice
Mango Sticky Rice is a delightful Thai dessert that combines sweet, ripe mango with sticky rice, all drizzled in a creamy coconut sauce. This vegan dish is a perfect balance of flavors and textures, making it a satisfying and nutritious meal.

Ingredients
- Glutinous rice - 150g
- Coconut milk - 200ml
- Sugar - 50g
- Salt - 1/4 tsp
- Ripe mango - 1 large
- Sesame seeds (optional) - 1 tbsp
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the soaked rice and steam it in a steamer basket lined with cheesecloth or a clean kitchen towel for about 20 minutes, or until tender.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves, but do not bring it to a boil.
- Once the rice is cooked, transfer it to a bowl and pour about 150ml of the coconut sauce over it. Mix gently and let it sit for about 10 minutes to absorb the flavors.
- While the rice is resting, peel and slice the mango into thin strips.
- To serve, place a portion of the sticky rice on a plate, arrange the mango slices beside it, and drizzle the remaining coconut sauce on top. Sprinkle with sesame seeds if desired.
