- Chicken breast - 250 grams
- Gluten-free burger buns - 2
- Ripe mango - 1 medium, diced
- Red onion - 50 grams, finely chopped
- Cilantro - 15 grams, chopped
- Lime - 1, juiced
- Thai red chili - 1, finely chopped (optional)
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat grill or skillet over medium heat.
- In a small bowl, combine diced mango, red onion, cilantro, lime juice, Thai red chili, and a pinch of salt to make the mango salsa. Set aside.
- Season the chicken breasts with garlic powder, salt, black pepper, and olive oil.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C.
- While the chicken is cooking, toast the gluten-free burger buns on the grill for 1-2 minutes until golden.
- Once the chicken is cooked, place it on the bottom half of each toasted bun.
- Top each chicken breast with a generous amount of mango salsa, then place the top half of the bun on each burger.
- Serve immediately with additional lime wedges if desired.
