Ingredients

  • Chicken breast - 250 grams
  • Gluten-free burger buns - 2
  • Ripe mango - 1 medium, diced
  • Red onion - 50 grams, finely chopped
  • Cilantro - 15 grams, chopped
  • Lime - 1, juiced
  • Thai red chili - 1, finely chopped (optional)
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat grill or skillet over medium heat.
  2. In a small bowl, combine diced mango, red onion, cilantro, lime juice, Thai red chili, and a pinch of salt to make the mango salsa. Set aside.
  3. Season the chicken breasts with garlic powder, salt, black pepper, and olive oil.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C.
  5. While the chicken is cooking, toast the gluten-free burger buns on the grill for 1-2 minutes until golden.
  6. Once the chicken is cooked, place it on the bottom half of each toasted bun.
  7. Top each chicken breast with a generous amount of mango salsa, then place the top half of the bun on each burger.
  8. Serve immediately with additional lime wedges if desired.
