  • Pizza dough - 200 grams
  • Mango - 1 large, diced

  • Red onion - 1/4, thinly sliced
  • Fresh cilantro - 2 tablespoons, chopped
  • Peanuts - 30 grams, crushed
  • Thai chili - 1 small, finely chopped (optional)
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet.
  3. Brush the dough lightly with olive oil and bake in the preheated oven for 10-12 minutes or until golden brown.
  4. In a mixing bowl, combine the diced mango, sliced cucumber, red bell pepper, red onion, chopped cilantro, and crushed peanuts.
  5. In a small bowl, whisk together the lime juice, soy sauce, sesame oil, and optional chopped Thai chili.
  6. Pour the dressing over the mango salad and toss gently to combine.
  7. Once the pizza crust is done baking, remove it from the oven and let it cool slightly.
  8. Spread the mango salad mixture evenly over the baked pizza crust.
  9. Slice the pizza into wedges and serve immediately, garnished with additional cilantro if desired.
