- Tapioca pearls - 50 grams
- Water - 500 ml
- Coconut milk - 200 ml
- Sugar - 2 tablespoons
- Salt - a pinch
- Ripe mango - 1 medium (approximately 200 grams)
- Lime juice - 1 tablespoon
- Fresh mint leaves - for garnish
Steps
- Rinse the tapioca pearls under cold water until the water runs clear.
- In a pot, bring 500 ml of water to a boil. Add the rinsed tapioca pearls and reduce the heat to a simmer.
- Cook the tapioca pearls for about 15-20 minutes, or until they become translucent, stirring occasionally to prevent sticking.
- Once cooked, remove the pot from heat, cover, and let the tapioca pearls sit for an additional 10 minutes to soften further.
- In a separate saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat gently over low heat until the sugar dissolves, but do not bring to a boil.
- Peel and dice the ripe mango into small cubes, setting aside some for garnish.
- Once the tapioca pearls are ready, drain them and rinse under cold water.
- Combine the drained tapioca pearls with the sweetened coconut milk and stir well.
- Add lime juice and diced mango to the mixture, and gently fold to combine.
- Serve the Mango Coconut Sago in bowls, garnished with the reserved mango cubes and fresh mint leaves.
