- Mushrooms - 100 grams, sliced
- Red chili - 1, sliced (adjust for spice preference)
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Green onion - 2, sliced
- Salt - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the diced chicken, coconut milk, chicken broth, chopped lemongrass, sliced galangal, torn kaffir lime leaves, and sliced mushrooms.
- Add the sliced red chili, fish sauce, and salt to the mixture. Stir well to combine all ingredients.
- Transfer the mixture into a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes, or until the chicken is cooked through.
