  • Chicken breast - 200 grams, diced
  • Coconut milk - 400 ml
  • Chicken broth - 200 ml
  • Lemongrass - 2 stalks, chopped
  • Galangal - 15 grams, sliced (or ginger if unavailable)
  • Kaffir lime leaves - 4 leaves, torn
  • Mushrooms - 100 grams, sliced
  • Red chili - 1, sliced (adjust for spice preference)
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Green onion - 2, sliced
  • Salt - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the diced chicken, coconut milk, chicken broth, chopped lemongrass, sliced galangal, torn kaffir lime leaves, and sliced mushrooms.
  3. Add the sliced red chili, fish sauce, and salt to the mixture. Stir well to combine all ingredients.
  4. Transfer the mixture into a baking dish and cover with aluminum foil.
  5. Bake in the preheated oven for 25 minutes, or until the chicken is cooked through.
  6. Remove the dish from the oven, stir in lime juice, and garnish with chopped cilantro and sliced green onions before serving.
