  • Vegetable oil - 1 tablespoon
  • Curry powder - 1 teaspoon

  • Skewers - 4 (soaked in water if wooden)
  • Peanut butter - 3 tablespoons
  • Coconut milk - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, combine minced lemongrass, garlic, ginger, soy sauce, maple syrup, vegetable oil, curry powder, and black pepper to create a marinade.
  2. Slice the portobello mushrooms into thick strips and add them to the marinade. Toss to coat and let marinate for at least 15 minutes.
  3. While the mushrooms are marinating, prepare the peanut sauce by mixing peanut butter, coconut milk, lime juice, and chili flakes in a small bowl until smooth. Adjust consistency with water if needed.
