  • Fresh lemongrass - 1 stalk, finely chopped
  • Fresh cilantro - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Red chili - 1 small, finely chopped (adjust to taste)
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Oats - 50 grams, ground into flour
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Sliced tomato - 1 medium
  • Avocado - 1 small, sliced

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork until mostly smooth but still a bit chunky.
  2. Add the chopped lemongrass, cilantro, minced garlic, grated ginger, chopped red chili, soy sauce, lime juice, ground oats, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are evenly combined.
  3. Form the mixture into two burger patties, ensuring they are compact and hold together.
  4. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  5. Once the oil is hot, add the burger patties and cook for about 4-5 minutes on each side until golden brown and heated through.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly until golden.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and avocado. Top with the other half of the bun.
  8. Serve immediately and enjoy your Lemongrass Chickpea Burgers with your favorite dipping sauce or side!
