Ingredients

  • Firm tofu - 200 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Brown sugar - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1 teaspoon
  • Fresh mint leaves - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Green onions - 2, sliced
  • Cucumber - 1/2, diced
  • Carrot - 1, grated
  • Lettuce leaves - 4, for serving
  • Roasted rice powder - 1 tablespoon
  • Peanuts - 2 tablespoons, crushed

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into small cubes.
  2. In a bowl, mix soy sauce, lime juice, brown sugar, minced garlic, and red chili flakes to create a marinade.
  3. Add the tofu cubes to the marinade and let it sit for 10 minutes.
  4. Heat a non-stick skillet over medium heat and add the marinated tofu. Cook for about 10 minutes, turning occasionally until golden and slightly crispy.
  5. In a large bowl, combine the cooked tofu, chopped mint, chopped cilantro, sliced green onions, diced cucumber, and grated carrot.
  6. Sprinkle roasted rice powder and crushed peanuts over the salad, and toss gently to combine.
  7. Serve the tofu salad on lettuce leaves, garnished with extra herbs and peanuts if desired.
